Agroittica Lombarda is the undisputed world leader in farmed caviar, with a production of more than 20 tons per year.
At Agroittica Lombarda, we manage the breeding of several sturgeon species (White Sturgeon, Siberian Sturgeon, Russian sturgeon and others) throughout the entire process thus ensuring genuineness and safety by following the product from the very beginning through to packing. Sturgeons, in fact, are born in captivity and the company therefore supports the protection of a species that is regarded as critically endangered all over the world.
Our farmed caviar is ready to face up to comparison with the famous caviars of the Caspian Sea. And, with all due respect to wild caviar, farmed Agroittica Lombarda is a consistently higher quality caviar. The production is carefully monitored in all minute details. Because the tiny black pearls are available from October to March (a period considerably longer than the sea fishing season), this also enables Agroittica Lombarda to time the roe extraction to perfection in an environment of absolutely pure waters, controlled feed and totally guaranteed hygiene.
The possibility of producing caviar over such a long length of time (about six months), an exclusive of Agroittica Lombarda, guarantees its freshness and has allowed our caviars to excel in all countries and obtain numerous worldwide awards.
Apart from freshness, Italian caviar has reached its present market-standing due to its world-wide recognized reputation of full traceability of the product, as well as the hygiene standards that comply with the strictest E.U. rules.
For these reasons, Agroittica Lombarda has been awarded with certifications of the highest accolade such as ISO 9001, "British Retail Consortium" and "International Foods Standard". We are particularly proud of "Friend of the Sea" certificate for sustainable aquaculture, an important award whose criteria follow the Food and Agriculture Organization of the United Nations guidelines.
